Sri Lankan cuisine

Sri Lankan cuisine is a unique fusion of local produce with spices and recipes brought to the island over centuries. Sinhalese cuisine, for example, is a blend of Indian, Arabic, Malay, Portuguese, Dutch, and English influences. One thing that unites all Sri Lankan dishes is their fiery, spicy, and aromatic character. Caramelized sweet onions meet spicy curries and fiery coconut sambol. A key ingredient in many dishes is Maldive fish—boiled, then dried and finely chopped bonito. This imparts a subtly fishy, ​​spicy flavor, especially to Sri Lankan vegetable dishes.
